Prosciutto Wrapped Scallops with Salad Greens
Plump sea scallops enveloped in salty prosciutto and served with a salad make for a delicious and impressive meal.The flavors of the pear and Gorgonzola vinaigrette with fresh greens add a depth of flavor to this unique dish.

Ingredients
- For the Scallops:
- 10 sea scallops
- 10 slices prosciutto di Parma
- 2 t canola oil
- For the Salad:
- 2-3 T walnut oil
- 2-3 T balsamic vinegar
- 2 T creamy (young) Gorgonzola cheese, pinched into small pieces
- 2 Comice pears, peeled & cut into small cubes
Preparation
Step 1
1. Wrap sides of each scallop w/1 slice of prosciutto. Place in fridge to rest while preparing the salad.
2. Wash & chill salad greens. whisk walnut oil & vinegar; add Gorgonzola & pears. Mix well.
3. Season with salt & pepper to taste. Taste & adjust flavor by adding more oil or vinegar.
4. Arrange greens on a salad plate. Top w/vinaigrette.
5. Heat a saute pan on high heat. Add 2t canola oil.
6. Place scallops in saute pan & sear top & bottom (approx. 1 min on each side).
7. Serve immediately w/salad greens.
