Blueberry Buckle

Ingredients

  • Buckle:
  • 1 stick butter and more for pan
  • 2 c. all-purpose flour and more for pan
  • 1 1/2 t. baking powder
  • 1/2 t. salt
  • 3/4 c. sugar
  • 1 egg
  • 1 t. vanilla
  • 1/2 milk
  • 5 c. fresh blueberries
  • Streusel Topping:
  • Combine ingredients until crumbly.
  • 1 t. ground cinnamon
  • 1/4 t. salt
  • 1/4 c. packed light brown sugar
  • 1 c. all-purpose flour
  • 6 T. butter, room temperature

Preparation

Step 1

Heat oven to 350.

Butter and flour springform pan.

In a medium bowl, sift together flour, baking powder and salt. Set aside.

In bowl, cream butter and sugar on medium speed until light and fluffy.

Reduce mixer speed to low and add egg and vanilla. When combined, alternate adding reserved flour blend and milk to mixture.

Gently fold in berries.

Pour batter into prepared pan. Sprinkle the struesel topping over cake. Bake 60-70 min. Cool 10 min and remove from pan. Cool 15 min. more before serving.
