Ingredients
- 1 teaspoon canola oil
- 1 small chopped onion
- 1 minced jalapeno
- 2 pounds zucchini, cut into 1/2 inch rounds
- 1/2 cup corn
- 1/2 teaspoon chili powder
- 3-4 Tablespoons water
Preparation
Step 1
Heat the oil on medium until it shimmers. Add the onion and jalapeno and stir-fry until soft, 1-2 minutes. Add the zucchini, corn, and chili powder. Add the water and cook until the zucchini is soft, about 5 minutes, adding a bit more water if needed to prevent scorching.
