Ingredients
- 2 LBS POTATOES, PEELED AND CUT INTO 1 INCH CUBES
- 4 CLOVES GARLIC PEELED
- 5 SLICES BACON CUT INTO 1/2 INCH PIECES
- 1 CUP THINLY SLICED GREEN ONIONS
- 1/2 CUP LOW FAT MILK WARMED
- 1/2 CUP LOW FAT SOUR CREAM
- 1 TSP SALT
- 1/2 TSP PEPPER
Preparation
Step 1
1. IN A LARGE POT, IMMERSE THE POTATOES AND GARLIC IN WATER
2. BOIL UNTIL THE POTATOES ARE FORK TENDER ABOUT 30 MINUTES
3. FRY THE BACON IN A SKILLET UNTIL CRISP; DRAIN ON A PAPER TOWEL
4. POUR OUT ALL BUT 1 TSP OF THE BACON DRIPPINGS FROM THE PAN.
5. ADD THE GREEN ONIONS TO THE DRIPPINGS, AND SAUTE UNTIL SOFT BUT NOT BROWN. RETURN THE BACON TO THE SKILLET AND STIR TO COMBINE.
6. DRAIN THE POTATOES AND GARLIC AND RETURN TO POT
7. MASH THE POTATOES WITH THE MILK, SOUR CREAM, SALT, AND PEPPER. STIR IN THE BACON AND GREEN ONIONS.
8. REHEAT IF NECESSARY BEFORE SERVING
