Stuffed Bell Peppers

Ingredients

  • 4-6 Green Bell Peppers
  • 2 - cups COOKED rice
  • 1 lb of ground meat (ground chuck will suffice)
  • 1 tsp of Worcestershire sauce
  • 1/2 cup of minced onion
  • 1 tbs of butter/margarine
  • 1 can (10 1/2 oz) of Tomato Soup
  • 1 can of corn kernels
  • Note: Olive oil and ground turkery may be subsituted to make meal healthier

Preparation

Step 1

Cut off top of bell peppers and remove seeds and ribs.

Cook in boiling salted water for 5 minutes. Drain and set aside to cool.

Brown ground meat and onions in the butter in the skillet until cooked. Stir in ½ can of soup, Worcestershire sauce, cooked rice, and corn.

Arrange peppers in casserole dish. Stuff peppers with the mixture. Bake at 375 degrees for 30 minutes. Top with cheese the last 10 minutes of cooking. Serve.
