Sausage Potato & Broccoli Skillet

Ingredients

  • 1 lb. hot or sweet Italian sausage (or a mixture of both)
  • 1 onion, chopped
  • 2 large garlic scapes, chopped
  • 1/4 tsp. red pepper flakes
  • 2 C. chicken stock
  • 2 lbs. yellow or red potatoes, scrubbed and sliced thin (about 1/8")
  • 1 lb. broccoli, chopped into florets
  • 1/2 C. heavy cream
  • juice of 1/2 a lemon
  • 2 TBS. chopped fresh parsley
  • salt, pepper

Preparation

Step 1

In a large skillet, cook the sausage over medium high heat, breaking it up into small pieces with the edge of a spoon.

When no longer pink (about 4 min.), reduce the heat to medium and add the onion, garlic scapes, and red pepper flakes.

Season with salt and pepper. Cook until the onions are soft, about 8 minutes.

Add the chicken stock, potatoes and broccoli.

Bring to a boil.

Cover and cook for 5-6 minutes, until broccoli and potatoes are tender.

Remove the lid and add the cream and lemon.

Taste for seasoning and add more salt if necessary.

Warm until cream is just heated through.

Sprinkle parsley over each serving.
