Whole Grain Greek Couscous with Pine Nuts

Ingredients

  • 1 1/2 tblsp vegetarian base
  • 3 1/2 c water
  • 1 lb whole wheat cous cous
  • 6 tblsp fresh lemon juice
  • 2 tsp salt
  • 3/4 tsp pepper
  • 1/2 c canola oil
  • 1 c garbanzo beans
  • 1 c sliced black olives
  • 1 cup crumbled feta cheese
  • 1 c diced red bell peppers
  • 1 cup diced celery
  • 3/4 c diced artichoke hearts
  • 3/4 c toasted pine nuts
  • 1/2 c sliced scallions
  • 2 tblsp chopped mint

Preparation

Step 1

Bring water and vegeterian base to a boil. Place cous cous in a heat safe container and add heated liquid mixture. cover with lid and allow liquid to be absorbed. Allow cous cous to cool and break up any clumps. Meanwhile combine all other ingredients in large bowl and mix until coated. Combine mixture with cooled cous cous.
