Cucumber Herb Salad

Ingredients

  • 1/4 cup low-fat yogurt
  • 2 tbsp coarsely chopped fresh dill
  • 1 tbsp coarsely chopped fresh parsley
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 1/2 tsp coarsely chopped fresh mint
  • 2 tsp dijon mustard
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 garlic clove
  • 5 1/2 cup thinly sliced cucumber (about 2 large)
  • 2 1/2 cup sliced red onion.

Preparation

Step 1

Combine the first 11 ingredients in a food processor and pulse until well blended.
Combine cucumber and onion in a large bowl.
Drizzle with yogurt mixture, toss to coat.
