Lemon Bars
I lined the pan with parchment paper (hanging over edge) so I could easily remove the whole thing and cut into bars - I also cooled the bars to room temp and then put them in the refrigerator before I took them out of the pan so it made cutting easier.

Ingredients
- Crust:
- Lemon Bars
- 2 sticks butter (room temp)
- 1/2 cup powdered sugar
- 2 cups flour
- 1 tsp salt
- Filling:
- 4 eggs
- 2 cups sugar
- 4 Tbsp flour
- 1/4 cup fresh lemon juice
- Rind of one lemon grated
Preparation
Step 1
Crust:
Mix together all ingredients and press into pan - I used 8x10 metal baking pan. Bake at 325 20-25 min
Filling:
Mix together ingredients and pour over cooked crust. Bake 20-25 min at 325. Sprinkle with powdered sugar (I do this after they are cooled).
