Lemon Bars

I lined the pan with parchment paper (hanging over edge) so I could easily remove the whole thing and cut into bars - I also cooled the bars to room temp and then put them in the refrigerator before I took them out of the pan so it made cutting easier.

Ingredients

  • Lemon Bars

  • Crust:

  • 2

    sticks butter (room temp)

  • 1/2

    cup powdered sugar

  • 2

    cups flour

  • 1

    tsp salt

  • Filling:

  • 4

    eggs

  • 2

    cups sugar

  • 4

    Tbsp flour

  • 1/4

    cup fresh lemon juice

  • Rind of one lemon grated

Directions

Crust: Mix together all ingredients and press into pan - I used 8x10 metal baking pan. Bake at 325 20-25 min Filling: Mix together ingredients and pour over cooked crust. Bake 20-25 min at 325. Sprinkle with powdered sugar (I do this after they are cooled).
