Ingredients
- 1 1/2 lbs. small red potatoes (about 20)
- 1 cup sour cream
- 4 bacon slices, cooked crisp, crumbled
- 1/2 tsp. seasoning salt
- 1/4 tsp. black pepper
- 2 tsp. chives, minced
- 1/2 cup cheddar cheese, finely grated
- fresh rosemary garnish
Preparation
Step 1
Bring potatoes to a boil, reduce heat to simmer until fork-tender but not mushy; put in cold water and drain.
Cut potatoes in half without tearing the skins; scoop out centers with a melon baller leaving 1/4 in walls; cut a small slice off bottom of each potato to sit level.
In a small bowl, combine sour cream, bacon, salt, pepper, and chives. Spoon mixture into halved potatoes, sprinkle with cheese and broil until cheese melts. Garnish with rosemary and serve.
