Vegetable Pasta Bake

Ingredients

  • Sauce:
  • 1 medium eggplant, peeled and sliced
  • 2 medium zucchini, sliced
  • 1 cup dried spaghetti, broken into pieces
  • 3 medium ribs celery, chopped
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 8 oz. part-skim mozzarella cheese
  • 2 8 oz. cans tomato sauce
  • 2 medium cloves garlic, crushed
  • 2 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp dried marjoram
  • Pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees. Spray a 9 x 13 dish with vegetable oil spray.

Combine ingredients for sauce in a medium bowl.

In pan, arrange half the eggplant slices in a single layer. Top with half of each of the following: zucchini, spaghetti, celery, onion, bell pepper, mozzarella and tomato sauce mixture. Repeat layers.

Bake covered for 1 hour or until vegetables are tender.
