Ingredients
- 1/2 cup onion, finely chopped
- 1/2 teaspoon garlic, minced
- 1 15 oz can solid pack pumpkin
- 3 1/2 cups canned fat-free chicken broth
- 1/2 cup skim milk
- salt and pepper
- nonfat plain yogurt
Preparation
Step 1
1. In a pot coated with nonstick cooking spray, saute the onion and garlic over a medium heat until tender, about 5 minutes.
2. Add the pumpkin. Gradually add the chicken broth and milk. Season with salt and pepper.
3. Cook until heated through, about 5 minutes. Serve with a dollop of yogurt.
