Grilled Pork Tenderloin

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, peeled and minced
  • 1 teaspoon salt
  • 1 teaspoon chili powder or ground cumin
  • 1 teaspoon coarsely ground black pepper
  • 1/2 pound pork tenderloin*
  • Grilled or sautéed boneless pork chops, or leftover pork roast, may be substituted for the pork tenderloin.

Preparation

Step 1

Make a paste with the olive oil, minced garlic, salt, chili powder or cumin, and pepper. Rub over the pork tenderloin. Grill or roast the tenderloin until it tests done, and refrigerate it until it's cool. Dice it into 1/4- to 1/2-inch pieces.
