Apple Cake

Ingredients

  • Cake:
  • 1 cup sugar
  • 1 cup unsifted flour
  • 4 tablespoons butter, cut in pieces
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 4 - 5 Granny Smith Apples
  • Topping:
  • 3 tablespoons sugar
  • 3 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 1 large egg

Preparation

Step 1

Add all cake ingredients (except apples) to food processor. Process until mixture resembles cornmeal. Spread mix in bottom (as well as a little up the sides) of a well buttered 9 inch spring form pan. Slice peeled apples in medium to thin slices.

Arrange in layers on top of crumb mixture. Bake in preheated oven at 350 degrees for 45 minutes. Meanwhile mix all topping ingredients in food processor til sugar dissolves. Spoon mixture over apples and bake another 25 - 30 minutes til top is firm.
