Salmon turnovers

Ingredients

  • 3 3/4 oz can salmon with juice
  • 1/4 cup fine dry bread crumbs
  • 1/4 cup cottage cheese
  • 1/4 cup cream cheese
  • 1 hard cooked egg finely chopped
  • 1/4 tsp salt
  • 1/2 tsp dill weed or 1 tbsp chopped fresh dill
  • pepper to taste
  • 1 pie crust (recipe to follow)

Preparation

Step 1

Preheat oven to 400 degrees F. Combine first 6 ingredients mix until all is well blended. Prepare pastry and roll out on a floured surface to 10" square. Transfer dough to a baking sheet. Spread filling on half of the dough, brush edges with beaten egg. Fold top over to form turnover, seal edges. Brush top with remaining beaten egg.
Bake for 25 min. or unti golden brown.

If desired serve topped with a white sauce flavoured with dill

Pie crust:

3/4 cup cake and pastry flour
dash salt
3 tbsp shortening or lard
2 tbsp cold water

Sift flour with salt. Cut shortening in with pastry cutter. Add the water a few drops at a time and mix with a fork to combine. Dough should not be wet but moist enough to hold together in a ball. Roll as required.
