Shel's Prawn & Mango Salad

Light and fresh for an afternoon entertaining in the warmer months

Ingredients

  • 1/2 kg prawns
  • 2 large mangos diced
  • zest 2-3 limes and juice
  • 1 tbsp fish sauce
  • 1 tsp brown or palm sugar
  • 1-2 long red chillies finely chopped or to taste
  • 1 bunch coriander
  • 1 bunch mint
  • bean sprouts mung or alfalfa
  • deed fried shallots (garnish)
  • avocado (optional- garnish)

Preparation

Step 1

Arrange peeled prawn with tails intact, mango, sprouts and herbs on a platter

Mix all other ingredients together drizzle over salad.

Sprinkle deep fried shallots over salad, avocado slices can be placed on top also
