Bacon Cheddar Potato Cakes

Ingredients

  • 3 Slices Bacon
  • 4 Cups Mashed Potatoes, leftover
  • 2 Eggs
  • 1 tsp. Onion Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 Cup Cheddar Cheese, shredded

Preparation

Step 1

Cook bacon in a large, deep skillet, until crisp, about 10 minutes. Remove bacon slices, crumble and set aside. Leave bacon drippings in pan. Mix the mashed potatoes, eggs, onion powder, salt and pepper together in a bowl; stir in cheddar cheese. Form mixture into 8 patties. Heat the bacon drippings and pan fry patties in drippings until crisp on both sides, about 4 minutes per side. Serve with bacon.
