Cheesy Beef Enchiladas

Ingredients

  • 1 lb. ground beef
  • 2 jars (16 oz.) mild thick 'n chunky salsa
  • 1 pkg. taco seasoning
  • 2 pkg. Mexican shredded cheese
  • 10 med. to lg. tortillas
  • 5 sliced black olives (opt.)
  • Sour cream (opt.)

Preparation

Step 1

Brown meat; drain. Add taco seasoning (follow directions on taco packet). Add 1/4 cup Mexican cheese to taco meat mixture. Spread 1 1/2 cups salsa in a 9x13-inch baking dish. Spoon 1/4 cup meat mixture in each tortilla; roll up. Place tortillas, seam-side-down, on salsa in baking dish. Repeat until dish is filled. Top with 1 1/2 cups salsa and cover top with 1 to 2 cups Mexican cheese. Bake at 350° for 20 to 25 minutes, until heated through.

Optional: Sprinkle sliced black olives over top. Serve sour cream on side.
