white bean and sausage soup

Ingredients

  • 1 lb sausage (removed from casings)
  • onion
  • 2 garlic cloves, minced
  • 1 14.5 oz can diced tomatoes
  • reduced sodium beef or chicken broth
  • 1 19 oz can cannellini, drained and rinsed
  • season with salt and pepper
  • 1 tbsp fresh basil
  • grated parmesan

Preparation

Step 1

in a dutch oven cook the sausage over medium high heat, breaking up with a spoon. add 1 small chopped onion and garlic. cook until sausage is browned and onion is soft, about 8 minutes. add diced tomatoes and broth, bring to a boil. reduce heat; simmer, partially covered, until tomatoes are soft, about 10 minutes. stir in cennellini, simmer until heated through, 2 minutes. season with salt and pepper. stir in fresh basil. garnich with parmesan.
