Spinach Salad w/Fried Goat Cheese

Ingredients

  • Pancetta, diced
  • Shallots, diced
  • 1 hard-boiled egg, sliced
  • Mushrooms, sliced
  • Red onion, sliced (optional)
  • 1 bag (6 oz) baby spinach
  • Goat cheese slices

Preparation

Step 1

Saute pancetta & shallots in small amount of olive oil.

Add to spinach and toss with egg, mushrooms and red onion.

Goat cheese: dip slices in egg white, panko and parmesan. Fry in olive oil until brown on both sides.
Add to salad.
