Sweet Potato Kale Cannellini Soup

Ingredients

  • 2 Tablespoons olive oil
  • 1 large chopped white onion
  • 4 cloves minced garlic
  • 1 bunch of kale, chopped into strips
  • 3 teaspoons Italian seasoning,
  • or 1 teaspoon each oregano, thyme,
  • and basil
  • 3 cans vegetable or chicken broth
  • 2 ( 15 ounce ) cans cannellini beans,
  • rinsed and drained
  • 1 pound of sweet potato, peeled and cubed
  • salt and pepper to taste

Preparation

Step 1

Saute the onion and garlic cloves in the olive oil, add the kale, and stir until kale is wilted. Add to a stock pot with all the other ingredients. Bring to a boil, then simmer until potatoes are tender, about 20 minutes.
