Ingredients
- 2 Tablespoons olive oil
- 1 large chopped white onion
- 4 cloves minced garlic
- 1 bunch of kale, chopped into strips
- 3 teaspoons Italian seasoning,
- or 1 teaspoon each oregano, thyme,
- and basil
- 3 cans vegetable or chicken broth
- 2 ( 15 ounce ) cans cannellini beans,
- rinsed and drained
- 1 pound of sweet potato, peeled and cubed
- salt and pepper to taste
Preparation
Step 1
Saute the onion and garlic cloves in the olive oil, add the kale, and stir until kale is wilted. Add to a stock pot with all the other ingredients. Bring to a boil, then simmer until potatoes are tender, about 20 minutes.
