Garbanzo-Spinach Salad

Ingredients

  • 3 15'Ounce cans garbanzo beans, drained and rinsed
  • 1/2 cup chopped yellow bell pepper
  • 3 green onions, finely chopped
  • 2 cups loosely packed chopped fresh spinach
  • 1/2 cup oil-free Italian dressing
  • 1/2 cup chopped red bell pepper
  • Freshly ground pepper

Preparation

Step 1

1. Combine garbanzo beans and vegetables in a bowl.
2. Pour dressing over and toss to mix.
3. Season with freshly ground pepper.
4. Refrigerate for 1-2 hours for best flavor.
