COCONUT FRUIT FLAVORED ALMOND SNOWBALLS

Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Dash of salt
  • 2 1/4 cups flour
  • 1 cup finely chopped, Blue Diamond Fruit Flavored Almonds which come in a variety of Blueberry, Raspberry or Strawberry flavors
  • 8 ounces white chocolate chips
  • 1 tablespoon shortening
  • 3 cups shredded coconut

Preparation

Step 1

Preheat oven to 350 degrees. In large bowl, beat butter, powdered sugar, vanilla and almond extracts until well blended. Gradually, add flour and salt. Stir in almonds. Shape into 1" balls. Place 1" apart on ungreased cookie sheets. Bake 12-15 minutes. Do not brown. Remove cookies from oven and cool on wire rack.

Fill small sauce pan 1/4 of the way with water. Place small metal or glass bowl on top of pan. Bowl should set above water level. Heat water to low boil over medium high heat. Place chips and shortening in bowl and melt, stirring often. Remove chocolate from heat. Roll cookies in chocolate, coating well. Then roll in coconut. Place cookies on cooling rack until chocolate is set.

Note: If chocolate hardens before all the cookies have been rolled, reheat over saucepan.
