Bacon and Cheddar Brunch Casserole

  • 2 cups buttermilk pancake mix
  • 2 cups milk
  • 5 large eggs
  • 1/2 cup maple syrup
  • 8 ounces bacon, cooked and crumbled

Preparation

Step 1

Preheat oven to 375F
Place pancake mix, milk, eggs and maple syrup in a large bowl. Using an electric mixer, beat on low speed for about 1 minute, or until the mixture is well blended.
Stir in cheese and bacon.
Pour the batter into a lightly greased 9-inch deep-dish pie pan. Bake for 35 to 40 minutes, or until the top is golden brown and the filling is set.
Let stand for 5 minutes before serving.
