Ingredients
- 1 1/2 lb fingerling potatoes, halved lengthwise
- 1/4 C olive oil
- 3 lge jalapenos, sliced in rings & seeded
- Salt & pepper
Preparation
Step 1
Preheat oven to 450.
In bowl, toss potatoes with oil & jalapenos. Season with salt & pepper. Transfer to rimmed baking sheet. Roast on upper rack @ 35 min. turning halfway thru. When golden, serve.
