Pumpkin Lentil Soup

Ingredients

  • 2 fg. onions, chopped
  • 1/4 tap. thyme
  • 3 T. butler
  • 1/4 tsp. marjoram
  • 5 C. chicken broth
  • 1/4 tsp. pepper
  • 1 (15 oz.) can pumpkin
  • 1 c. half & half
  • 3/4 c. lentils, washed
  • 1 lb. sweet Italian sausage (opt.)

Preparation

Step 1

Saute onion in butter Add broth, pumpkin, lentils and spices Bring to a boil.;simmer for 1 hour, or until lentils are tender (optional: slice sausage into coins and brown). Add sausage and half & half, heal through.
