Ingredients
- 24 oz green beans, ends trimmed
- 8 T fresh lemon juice
- 2 T olive oil
- 4 T minced lemon zest
- Salt and pepper to taste
Preparation
Step 1
Add water to a pot fitted with a steamer basket until the water level is barely at the bottom of the basket.
Bring water to a boil over high heat. Add beans to the steamer basket and cover pot.
Steam beans until tender, but still firm, about five minutes. Take them out of pot immediately or they will keep cooking and get limp. Put beans in a bowl; toss with lemon juice, oil and zest. Season with salt and pepper.
