German Potato Salad (Terry Suhre)

Ingredients

  • 8 medium potatoes
  • 1 small onion, chopped
  • 5 slices of bacon, diced
  • DRESSING
  • 1/4 cup vinegar
  • 1/2 cup sugar
  • 1 cup water (scant)
  • 2 Tab cornstarch
  • 1/2 cup butter

Preparation

Step 1

Boil Potatoes with peeling on. Add salt to water. Cook until tender. Cool, peel, and slice. Add chopped onion. Set aside. In skillet, fry chopped bacon. Add butter and let melt. Then add vinegar and sugar. To water, add cornstarch and stir to dissolve. Add to bacon mixture and stir until thickened over low heat. Pour over potatoes and onions. Mix well and serve warm.
Can add a pinch of celery seed.
