Curried Cauliflower

Ingredients

  • 2 tsp light stick butter
  • 1 cup chopped onion
  • 1 garlic clove
  • 1 (1 inch) piece fresh ginger, minced
  • 4 cups fresh cauliflower
  • 1/2 cup water
  • 1 1/2 tsp curry powder
  • 1/2 tsp salt

Preparation

Step 1

Melt butter in a large nonstick skillet over medium high heat. Add onion, garlic, and ginger and cook, stirring constantly 5 minutes. Add cauliflower and remaining 3 ingredients. Bring to a boil; cover, reduce heat and simmer 7 - 8 minutes or until tender, stirring occasionally.
