Ingredients
- 2 skinless, boneless chicken breasts cut into small chunks
- 6-8 green onions, chopped
- 3 cloves of garlic, minced
- 4 T. olive oil
- 2 T. butter
- 1 T. flour (use coconut for gluten free)
- 12 oz jar fire roasted peppers, cut into strips plus juice
- 1/4 cup chopped sun dried tomatoes
- 1 cup 100% orange juice
- Salt and pepper
Preparation
Step 1
In medium pan, heat 2 T. olive oil and season chicken with salt and pepper and cook over medium high heat until brown and cooked through.
In a separate pan, sauté green onion and garlic in 2 T. olive oil for about 2 minutes. Add roasted peppers, juice of peppers, and sun dried tomatoes. Cook for 2 more minutes. Push all to side of pan and add butter and flour and stir to make rue. Mix in with other ingredients and add orange juice. Cook (stirring frequently) until sauce boils and thickens. Stir in cooked chicken and serve.
