Ingredients
- 1 Eggplant, sliced
- 1/2 Cup Pizza Sauce
- 1/2 Cup Mozzarella Cheese
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 2 tsp. Olive Oil for brushing
- Toppings as desired
Preparation
Step 1
Slice eggplant and sprinkle with salt on each side; set aside for about 30 minutes and then rinse and pat dry. This will take bitterness out of the eggplant, especially is using larger/older eggplant. Preheat oven to 425 degrees. Brush each side of the eggplant with olive oil, then sprinkle with salt and pepper. Place slices on a cooling rack on a cookie sheet lined with foil and bake until softened and lightly browned, about 6 minutes. Remove from oven and spread pizza sauce on the eggplant slices. Add cheese and toppings of choice (black olives, pepperoni, mushrooms, etc.). Return to oven and bake for another 5 minutes until the cheese melts.
