Carrots with Curry and Cilantro

Ingredients

  • 3 tblsp butter
  • 1 tsp minced peeled fresh ginger
  • 1 garlic clove, minced
  • 3/4 tsp curry powder
  • 1/4 cup chicken broth
  • 2 tblsp apricot preserves
  • 1 lb carrots,peeled, cut diagonally into 1/4 inch thick slices
  • 3 tblsp fresh cilantro, chopped

Preparation

Step 1

Melt butter. Add ginger, garlic and curry; saute 30 seconds. Stir in broth and preserves, Add carrots; cover and simmer until carrots are done to your liking. Season with salt and pepper and mix in cilantro.
