Ingredients
- 4 boneless chicken breasts
- 1/3 cup reduced calorie yogurt
- 1/3 cup reduced calorie mayonnaise
- 1 tablespoon curry powder
- 1/2 teaspoon Salt
- 1/4 teaspoon cayenne pepper
- 1 cup panko bread crumbs
Preparation
Step 1
Heat oven to 450°F. Spray small baking sheet with nonstick cooking spray.
Place chicken breasts between 2 sheets of plastic wrap, with flat side of
meat mallet, pound to flatten chicken to 1/2 inch.
In small shallow dish, stir together yogurt, mayonnaise, curry powder, salt
and cayenne pepper. Reserve 2 tablespoons of the yogurt mixture. Place
panko in another small shallow dish. Dip chicken into yogurt mixture, then
into panko to coat completely.
Arrange chicken on baking sheet; lightly spray top of chicken with nonstick
cooking spray (this will help chicken brown). Bake 15 minutes or until
coating is crisp and golden brown and chicken is no longer pink in center.
Serve chicken, garnish with small dollop of the reserved yogurt mixture.
