POTATO SOUP

Ingredients

  • 6 Med. Red skin potatoes
  • 1 Clove Garlic
  • 1 Sm. Onion (diced)
  • 1 Med. Carrot (diced)
  • 1 Tsp Celery Seed
  • 1 Tsp Parsley Flakes
  • 1 Qt. Half & Half
  • 1 Qt. Water
  • 1 Stalk Celery (diced)
  • 2 Tbls Butter
  • 1/4 Tsp Salt
  • 1/4 Tsp Pepper

Preparation

Step 1

In a large sauce pan combine Onions,celery, garlic, carrots & butter and cook until onions are clear. Being careful not to burn.

Add water, potatoes, salt & pepper and cook until potatoes are soft.

Add celery seed & half & half and cook until creamy. You may have to mash some of the potatoes to make creamer.
