Beet Hummus

Ingredients

  • 3 medium beets (1 cup cooked and chopped)
  • 1 can of chick peas, drained and rinsed
  • 1 clove garlic
  • 3 tbls. tahini
  • 2-3 tbls. fresh lemon juice
  • 1 1/2 tsp. ground cumin
  • generous pinch of salt

Preparation

Step 1

If roasting the beets yourself, wrap beets in foil and roast at 400 degrees for about an hour, or until tender. Cool, peel, and slice into chunks.

Blend all ingredients in a food processor until smooth. If too thick, add water until the consistency you want is achieved.
