Ingredients
- 2 tsp paprika
- 1 1/2 crushed rosemary leaves
- 1 tsp minced garlic
- 1/2 black pepper
- 2 tablespoons olive oil
- 1 tsp salt
- 2 pounds of skinless, boneless chicken cut in chunks or strips
- 1 1/2 pounds red potatoes, cut into 1 1/2 inch cubes with skins on
Preparation
Step 1
Mix all of the included spices into a bowl with the olive oil. Then add in the chicken and potatoes, mixing to coat every piece thoroughly.
Coat a 15" by 10" by 1" roasting pan with cooking spray. Then place the chicken and potatoes in a single layer inside the pan.
All that is left is to roast these ingredients at 425 degrees Fahrenheit for at least 30 minutes. After 15 minutes, remove the pan from the oven and turn the potatoes. Put back in and cook for the remaining 15 minutes.
After one-half hour, check to make sure the potatoes are tender and the chicken is cooked through.
