Ingredients
- 1 tablespoon olive oil
- 1 cup frozen hash brown potatoes
- 1 cup frozen chopped green pepper
- 1 cup sliced white mushrooms
- 2 scallions, chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 eggs (I use substitute equivalent)
- 4 egg whites
- 2 teaspoons shredded cheddar (I use points for lite)
