Potato Green Pepper Frittata

Ingredients

  • 1 tablespoon olive oil
  • 1 cup frozen hash brown potatoes
  • 1 cup frozen chopped green pepper
  • 1 cup sliced white mushrooms
  • 2 scallions, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 eggs (I use substitute equivalent)
  • 4 egg whites
  • 2 teaspoons shredded cheddar (I use points for lite)

Preparation

Mix all ingredients.
