French Onion Soup

Ingredients

  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons olive oil
  • 1/2 pound onions, thinly sliced
  • 1/4 pound leeks, white part only,thinly sliced
  • 1-2 garlic cloves,minced
  • 1/4 teaspoon sugar
  • 1 1/2 teaspoons flour
  • 4 cups heated beef broth
  • 1/4 cup dry vermouth
  • dash tabasco
  • salt/pepper
  • sliced french bread
  • gruyere cheese

Preparation

Step 1

Melt butter and oil. Add garlic, onions and leeks. Cook until soft.

Add sugar and cook until onions are golden brown. About 30 minutes.

Add flour and stir 3 minutes.

Add stock,vermouth, tabasco and pepper. Simmer 40 minutes.

Divide soup into crocks. Add french bread and cheese. Broil until golden brown.
