Ingredients

    tablespoon unsalted butter

  • 1 1/2

    teaspoons olive oil

  • 1/2

    pound onions, thinly sliced

  • 1/4

    pound leeks, white part only,thinly sliced

  • 1-2

    garlic cloves,minced

  • 1/4

    teaspoon sugar

  • 1 1/2

    teaspoons flour

  • 4

    cups heated beef broth

  • 1/4

    cup dry vermouth

  • dash tabasco

  • salt/pepper

  • sliced french bread

  • gruyere cheese

Directions

Melt butter and oil. Add garlic, onions and leeks. Cook until soft. Add sugar and cook until onions are golden brown. About 30 minutes. Add flour and stir 3 minutes. Add stock,vermouth, tabasco and pepper. Simmer 40 minutes. Divide soup into crocks. Add french bread and cheese. Broil until golden brown.
