Coconut Cupcakes with Cream Cheese Frosting

Ingredients

  • Frosting:
  • 3/4 cup butter
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 cup coconut milk
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2- 3/4 cup coconut
  • 1/2 cup butter
  • 8 oz. cream cheese
  • 2 + cups powdered sugar
  • 1/4 cup coconut

Preparation

Step 1

Cream butter and sugar. Add eggs one at a time. Combine milk and vanilla, add alternately with dry ingredients, starting and ending with dry. Fold in coconut. Bake at 350 about 22 minutes.
