Ingredients
- 1 lb scallops
- 3 tblsp butter
- 2 tblsp flour
- 1 cup heavy cream
- 1/4 cup parmesan cheese
- salt & pepper
- 1 box frozen chopped spinach
- 1 cup shredded mozzarella
- 1/4 cup parmesan cheese
- 1/4 cup bread crumbs
- 1 tblsp Old Bay seasoning
Preparation
Step 1
Preheat oven to 350. Poach scallops in boiling water for 2 minutes. Remove from water and place on the bottom of a light greased baking dish. In a small saucepan, melt the butter and stir in the flour. Cook over low heat for 3 minutes. Whisk in heavy cream, 1/4 cup parmesan cheese, salt and pepper to taste and cook for another 2 to 3 munutes, stirring constantly until thickened. Squeeze the spinach dry and spread over the scallops. Pour the cream sauce over the spinach. Sprinkle on the mozzarella, 1/4 parmesan cheese and bread crumbs. Sprinkle the top with the Old Bay Seasoning. Bake for 15 minutes.
