Lemon Meringue Pie

Ingredients

  • Lemon Filling
  • 1 1/2 Cup Sugar
  • 1 1/2 Cup Water
  • 1/3 Cup Cornstarch
  • 3 beaten egg yolks
  • 3 Tbsp butter
  • 1/4 C lemon juice
  • 1 Tbsp lemon zest
  • Meringue
  • 3 beaten egg whites
  • 1 Tbsp powdered sugar per egg
  • Triple recipe and make in jelly roll pan for large pie.

Preparation

Step 1

Mix first 3 ingredients together and boil 1 minute.
Add egg yolks to sugar mixture
Fold in butter, lemon juice and lemon zest.
Put into cooled pie crust.
Top with meringue & bake at 350 till brown.

Meringue
Beat egg whites til stiff
add powdered sugar
spread onto lemon filling
Bake at 350 till brown
