Ingredients
- 8 small red or white potatoes
- 2 tbsp olive oil
- 2 tbsp grated parmesan cheese
- 1/4 tsp garlic powder
- 1/8 tsp paprika
- 1/8 tsp salt
- 3 tbsp finely chopped parsley
Preparation
Step 1
Preheat over to 400F degrees. Line baking sheet with foil sprayed with cooking spray.
In a saucepan cover potatoes with water and bring to boil. Boil for 15 minutes or just until they are fork tender.
Drain potatoes and place on baking sheet. Press potatoes gently with a paper towel until flat, trying not to break potatoes (slight cracks are normal).
Brush with 1 tbsp olive oil.
Combine cheese, garlic powder, paprika and salt in small bowl. Sprinkle half of mixture over top of potatoes. Bake for 15 minutes.
Turn potatoes over and brush with remaining olive oil, then sprinkle with remaining cheese mixture. Bake another 15 minutes.
Garnish with parsley.
