Ingredients
- Nonstick cooking spray
- 12 ounces smoked, cooked chicken or turkey sausage, halve lengthwise and sliced crosswise into 1-in. pieces
- 1 large onion , cut into thin wedges
- 2 clove garlic, minced
- 3 14-ounce cans reduced-sodium chicken broth
- 1 14.5-ounce can diced tomatoes with basil, garlic and oregano, undrained
- 1 10-ounce package frozen baby lima beans
- 1 cup water
- 2 9-ounce packages refrigerated cheese or mushroom tortellini
- 1/2 cup sliver fresh basil
- 2 tablespoons finely shredded Parmesan cheese
Preparation
Step 1
Lightly coat an unheated Dutch oven with cooking spray. Heat over medium heat.
Add sausage, onion, and garlic to hot Dutch oven; cook until sausage is brown and onion is tender. Drain off fat.
Add broth, undrained tomatoes, lima beans and water. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Add tortellini. Return to boiling; reduce heat. Simmer uncovered, for 5 minutes or until pasta and beans are tender.
Serve at once. Sprinkle servings with basil. If desired sprinkle with cheese.
