Ratatouille

I made this for the party after our wedding in August, 1979, with our own fresh garden vegetables. It makes a delicious summer dish!

Ingredients

  • 2 large onions, sliced
  • 2 garlic cloves, minced
  • 1 eggplant, peeled and cut into 1/2 - 1 inch cubes
  • 6 medium zucchini thickly sliced
  • 2 green or red peppers seeded and cut into chunks
  • 4 large tomatoes peeled and chunked
  • 1 tsp. basil
  • 1/2 C. minced parsley
  • 4 T. olive oil
  • parsley

Preparation

Step 1

Place zucchini and eggplant into colander to drain - 15 minutes. Put all ingredients together in large pot or slow cooker, cover and cook on simmer for 3 -4 hours stirring occasionally. Season with salt and freshly ground pepper.
