Chicken or Veal Parmigiana

Ingredients

  • 1/4 c oil
  • 1/2 - 1 c cornflakes
  • 1/4 - 1 c grated parmesan cheese
  • 4 chicken breast halves, skinned and boned
  • or
  • 4 veal cutlets or scallopini (1/4 - 1/2 " thick)
  • 2 slightly beated eggs
  • 1 16 oz italian style tomato sauce
  • 6 oz shredded mozzarella cheese

Preparation

Step 1

Combine cornflake crumbs and parmesan cheese. Dip chicken breasts (or veal) in beaten egg and roll in crumb mixture. Brown in the hot oil.

Arrange in baking dish. Top with tomato sauce. Bake, covered, @ 350 for 50 minutes.

Uncover and top with mozzarella; bake anothe 15 - 20 minutes or until fork tender.
