Pasta Salad II

Ingredients

  • 1 pkg of tri-color spiral pasta
  • 1 pkg (2 c.) of mozzarella cheese (shredded)
  • I bottle of Paul Newman’s classic Caesar Salad Dressing
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • A box of croutons (optional)

Preparation

Step 1

Boil pasta, drain and chill. Once the pasta is chilled add all the cheese, peppers, and enough dressing to taste. If croutons are desired, add right before serving so they don’t get soggy. I like to let the pasta salad sit it the fridge awhile before serving so that the flavors can meld together.

*** Also, my special trick is to add a small amount of each of the peppers to the water while the pasta is boiling. I remove those pieces once I drain the pasta but it helps the pasta soak up a yummy flavor!
