Black Bean Soup for Two

Ingredients

  • 1/4 c chopped onion
  • 2 garlic cloves, minced
  • 1 T olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14 oz) vegetable or beef broth
  • 1 bay leaf
  • 1 – 2 tsp lime juice
  • 1/8 tsp hot pepper sauce
  • Pepper to taste

Preparation

Step 1

In a large saucepan, sauté onion and garlic until tender. Stir in the cumin, oregano, and chili powder. Saute 2 min. longer. Add tomato sauce, beans, broth and bay leaf

Bring to boil. Reduce heat; cover and simmer for 45 min. Stir in lime juice; simmer 10 to 15 minutes longer. Discard bay leaf. Add pepper and sauce
