Garlic Cheddar Muffins

Ingredients

  • 1 TBSP Olive Oil
  • 1/4 Cup Butter
  • 1/4 Cup Chopped fresh Chives
  • 1.5 tsp Minced Garlic
  • 2 Cups all-purpose Baking mix
  • 1 Cup Grated extra-sharp Cheddar Cheese
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1 Cup Buttermilk

Preparation

Step 1

Preheat oven to 350`F. Grease a 12 muffin pan with oilve oil. In a small saucepan, melt butter over medium heat. Add chives and garlic, and cook for 2 minutes, remove from heat and set aside. In a medium bowl, combine baking mix, cheese, garlic powder and pepper. In a separate bowl, combine buttermilk and butter mixture. Add buttermilk mixture to baking mixture, stirring until dry ingredients are moistened. Let batter stand for 5 minutes. Evenly spoon batter into prepared muffin pan. Bake for 30 minutes until golden brown. Cool in pan for 5 minutes before removing. Yields 1 dozen
